Have I ever mentioned that I was addicted to soups? Aren’t they a great way to eat vegetables, usually quick to prepare and to me, very conforting food? To be precise, I love to have soup in the evening… With some nice bread and cheese, or as starter. These past days have been again pretty warm, so it was a great opportunity to prepare cold ones…
Here is a refreshing, delicious soup, packed with good stuff and very quick to prepare!
How do you like your soup?
Ingredients for two servings:
recipe inspired by this recipe: here and from the yayla çorbasi, of the book “Turkish Cuisine”, bought a few years ago in Istanbul (no author name).
2 slice of loaf bread, crust removed
2 cloves garlic, crushed
2 tablespoons olive oil
250g plain yogurt (I used Greek style, but low-fat or soy can be used)
75g walnuts, coarsely chopped
1 cucumber (about 30 cm long) or 2 small ones, peeled
2 tablespoons lemon juice
Salt and freshly ground pepper
2 teaspoons mint leaves, finely chopped
Method:
Soak the bread in warm water for 5 minutes. Drain and squeeze excess water. That is the hardest you will have to do for this soup…. Then…
Put all the ingredients –except one teaspoon of the mint and a few pieces of walnuts that you will keep for decorating the bowls – in a blender.
Blend until the mixture is smooth.
Check the seasoning, if needed add some more salt and pepper.
Pour into serving bowls, garnish with a pinch of mint, some walnuts pieces and a few grinds of freshly ground black pepper.
Note: If you want to prepare this soup in advance, do not blend the cucumbers with the mixture in advance, it would become too watery. You will add them at the last minute to the mixture and blend it well.

Ai-je déjà mentionné à quel point j’adorais les soupes? Ne sont-elles pas l’un des meilleurs moyens pour manger des légumes, rapides à préparer ? Pour être précise, j’aime manger de la soupe le soir … Avec du bon pain et de fromage , ou comme entrée. Ces jours derniers il fait à nouveau très chaud, c’ était donc une excellente occasion de préparer une soupe froide …
Voici donc une soupe rafraîchissante et bien crémeuse, remplie de bons nutriments et très rapides à préparer!

Ingrédients pour deux personnes:
Recette inspirée de cette recette (ici ) et par la recette de “yayla çorbasi”, du livre “Turkish Cuisine”, acheté à Istanbul il y a quelques années (pas de nom d’auteur ).
2 tranche de pain de mie, sans la croûte
2 gousses d’ail écrasées
2 cuillères à soupe d’huile d’olive
250g de yogourt nature (j’ai utilisé du yaourt grec, mais on peut remplacer par du yaourt maigre ou de lait de soja)
75g de noix, grossièrement hachées
1 concombre (environ 30 cm de long) ou 2 petits, pelées
2 cuillères à soupe de jus de citron
Sel et poivre du moulin
2 cuillères à café de menthe feuilles, finement ciselées
Préparation:
Faire tremper le pain dans l’eau chaude pendant 5 minutes. Les égoutter et les essorer. Cette opération est la chose la plus difficile à faire pour la préparation de cette soupe, car le reste est vraiment simple….
Mettre tous les ingrédients – sauf une cuillère à café de menthe et quelques morceaux de noix que vous garderez pour la décoration des bols – dans un mixer.
Mixer jusqu’à ce que le mélange soit bien onctueux.
Vérifier l’assaisonnement, si nécessaire ajouter un peu plus de sel et de poivre.
Verser dans des bols, décorer avec une pincée de menthe, quelques morceaux de noix et quelques tours de moulin de poivre noir.
Note: Si vous voulez préparer cette soupe à l’avance, ne pas mélanger les concombres en avance, car ils rendent de l’eau, ce qui ferait perdre de l’onctuosité à la soupe. Il faut donc les ajouter à la dernière minute et remixer le tout.
